Grilled Pork Tenderloin With Raspberry Chevre Sauce

For Grilled Tenderloin
- 3lbs boneless pork tenderloin(can probably use loin, too ,if desired) shopping list
- 2T BBQ seasoning shopping list
- 1/4 cup spicy mustard shopping list
- 2T minced onion or sub fresh grated shopping list
- 3 cloves garlic, minced shopping list
- couple dashes liquid smoke shopping list
- 1T smoked paprika shopping list
- 1/2-2t cayenne shopping list
- 1 lemon, juiced shopping list
- kosher or sea salt and fresh ground pepper shopping list
For Raspberry Chevre Sauce
- 1/2pt raspberries shopping list
- 4oz goats cheese shopping list
- 1/4-1/2 cup sparkling wine, water or juice shopping list
- hot sauce shopping list
- kosher or sea salt and fresh ground pepper shopping list
- couple T cream shopping list
How to make it
- Combine BBQ seasoning, mustard, onion, garlic, liquid smoke, paprika, cayenne, salt and pepper and lemon juice in a large zipper bag.
- Add the pork tenderloin(s) and toss to coat well.
- Let rest 30 minutes outside of fridge, or, better yet, refrigerate over night.
- Grill over medium high heat for 5-7 minutes, turn once, and cook another 5-7 minutes until internal temperature is about 150.
For Raspberry Chevre Sauce
- In medium sauce pan, heat raspberries and sparkling water, wine or juice.
- Heat over medium heat for about 10 minutes or so, smashing berries well as it heats up. You can leave this with as much texture as you want, but I mashed mine pretty smooth.
- Add goats cheese, a few dashes of hot sauce and salt and pepper and continue to heat, stirring constantly, until cheese is completely melted.
- Add cream as needed to obtain desired consistency.
- Serve sliced tenderloin with the sauce.
