Ingredients

How to make it

  • Combine BBQ seasoning, mustard, onion, garlic, liquid smoke, paprika, cayenne, salt and pepper and lemon juice in a large zipper bag.
  • Add the pork tenderloin(s) and toss to coat well.
  • Let rest 30 minutes outside of fridge, or, better yet, refrigerate over night.
  • Grill over medium high heat for 5-7 minutes, turn once, and cook another 5-7 minutes until internal temperature is about 150.
  • For Raspberry Chevre Sauce

  • In medium sauce pan, heat raspberries and sparkling water, wine or juice.
  • Heat over medium heat for about 10 minutes or so, smashing berries well as it heats up. You can leave this with as much texture as you want, but I mashed mine pretty smooth.
  • Add goats cheese, a few dashes of hot sauce and salt and pepper and continue to heat, stirring constantly, until cheese is completely melted.
  • Add cream as needed to obtain desired consistency.
  • Serve sliced tenderloin with the sauce.

Sounds wonderful - I am going to try this as soon as the rain stops and I can get outside to grill.
