Stawberry Mallow Cheesecake Squares Recipe
This is a really easy dessert to make and kids can easily help with the prep work.

Ingredients
  • 40 Nilla Wafers, finely crushed
  • 1/4 cup (1/2 stick) butter or margarine, melted
  • 1 bag (10 oz) Jef-Puffed Strawberry Mallows
  • 1 pkg (10 oz) frozen strawverries in syrup, undrained, cut in half
  • 2 pkg (8 oz each) Cream Cheese, softened
  • 1 Tbsp lemon juice
  • 2 cups thawed Cool Whip

Directions
  1. Mix wafer crumbs and butter; press firmly onto bottom of 13X9 pan.
  2. Place marshmallows and frozen berries in large microwaveable bowl. Microwave on high for 3 minutes or until marshmallows are puffed, stirring after 2 minutes. Stir until well blended; set aside.
  3. Beat cream cheese ad lemon juice in large bowl with electric mixer on medium speed until well blended.
  4. Add marshmallow mixture; mix well.
  5. Gently stir in whipped topping; pour over crust.
  6. Refrigerate 4 hours or until firm
  7. Cut into squares to serve.
  8. Store leftover dessert in refridgerator.

When I made this I used 16 oz of frozen strawberries and it worked just fine. Also, if you can't find the strawberry marshmallows you could probably use strawberry cool whip and then just use regular marshmallows.
