Asian Meatball Dinner Recipe
Spicy, savory Meatball Dinner with a host of different ingredients to add fun and flavour!

Ingredients
  • 1 1/2 lbs ground beef
  • 2/3 cup cracker crumbs
  • 1/4 tsp ginger
  • 1 egg
  • 1/4 cup grape jelly
  • 1/4 cup milk
  • 1 T olive oil
  • 2 T cornstarch
  • 1/2 cup brown sugar
  • 1 tsp beef bouillon dissolved in 1 cup water
  • 1/3 cup white vinegar
  • 1 T soy sauce
  • 1 cup carrots, sliced thin
  • 1 1/2 cup broccoli, cut in 1 1/2 inch chunks
  • 2 Cups cooked rice (or more if desired)
  • Add chow mein noodles for garnish

Directions
  1. Mix beef thoroughly with cracker crumbs, ginger, egg, grape jelly and milk. Shape mix into teaspoon size balls.
  2. Melt shortening in large skillet; brown and cook meatballs.
  3. Remove meatballs from skillet.
  4. In a bowl, mix cornstarch, sugar, beef bouillon, vinegar and soy sauce. Then pour mix into skillet and add vegetables.
  5. Cook over medium heat, stirring constantly until thick.
  6. Add meatballs and stir.
  7. Cover and simmer for a few minutes over low heat.
  8. Serve over cooked rice with garnish of chow mein noodles!

Okay, Noir--this recipe has such oddball ingredients that I'll just have to try it. I find sometimes the stranger the ingredient list, the better the final product tastes.
