Greek Flatbread Wraps With Pepperoncini Spread

- 1lb Greek marinated grilled chicken, like that described, here chicken-kabobs.html">Greek chicken Kabobs shopping list
- about 6oz fresh mushrooms, sliced shopping list
- 1 large onion, sliced into very thin rings shopping list
- 1 large red bell pepper sliced into thin strips(or you can sub roasted red pepper strips) shopping list
- about a dozen large jalapeno stuffed olives, sliced shopping list
- 1 large cucumber sliced very thin or into thin strips shopping list
- Couple hand fulls of fresh spinach leaves shopping list
- about 8oz feta crumbles shopping list
- 6 large flatbreads(I used multi grain) shopping list
For pepperoncini artichoke Spread
- 1 cup cooked artichoke hearts, drained, chopped shopping list
- 6-8 pepperoncini, chopped shopping list
- about 1/2 cup Greek style yogurt shopping list
- 1T Dijon mustard shopping list
- fresh ground pepper shopping list
How to make it
- Combine all ingredients for the spread and mix well.
- This can be used immediately or it can be refrigerated for a couple days, prior.
- Spread half of the wrap with some of the spread from above, then layer remaining ingredients on one side of the flatbread and carefully roll up.
- The onion/mushroom and pepper can be quickly sauteed for a few minutes, if desired. I desired. :-)
