Cornbread Salad Recipe

This is very tasty. A family favorite for several years. Nice salad for a hot day. Enjoy

Ingredients
- 1 box Jiffy corn muffin mix, prepared as directed, cooled and crumbled
- 1/2 c. pickle relish (not salad cubes)
- 1/2 c. pickle juice from relish
- 1 chopped red onion
- 1 chopped bell pepper
- 2 chopped fresh tomatoes
- 2 jars real bacon bits (I suggest the tall Hormel jars)
- 1 pint mayonnaise
Directions
- Layer half cornbread, pickle relish, pickle juice, onion, bell pepper, tomatoes, bacon bits and spread with half of mayonnaise.
- Repeat layers.
- Chill before serving.
