Cornbread Salad Recipe

Ingredients

1 box Jiffy corn muffin mix, prepared as directed, cooled and crumbled

1/2 c. pickle relish (not salad cubes)

1/2 c. pickle juice from relish

1 chopped red onion

1 chopped bell pepper

2 chopped fresh tomatoes

2 jars real bacon bits (I suggest the tall Hormel jars)

1 pint mayonnaise

Directions

Layer half cornbread, pickle relish, pickle juice, onion, bell pepper, tomatoes, bacon bits and spread with half of mayonnaise.

Repeat layers.

Chill before serving.
