Taco Chicken Bowls

- 2 boneless, skinless chicken breasts (you can use frozen!) shopping list
- 1 (16 oz.) jar of salsa shopping list
- 1 can black beans, drained and rinsed shopping list
- 8 ounces frozen corn shopping list
- 1 TBSP chili powder shopping list
- 1/2 TBSP cumin shopping list
- 1/2 TBSP garlic, minced shopping list
- 1/2 tsp oregano (we left this out, but I'm sure it adds nice flavor) shopping list
- 1/4 tsp cayenne shopping list
- 1/4 tsp salt shopping list
- cilantro, for garnishing shopping list
- rice shopping list
- cheese for garnishing shopping list
How to make it
- Place everything (except rice, cilantro and cheese) into your Crock Pot. Add in 1/4 c. water and stir to get everything nice and combined. Cook on LOW for 8 hours. When it's done, shred your chicken and stir to combine.
- Serve over white rice, and garnish with shredded cheese and cilantro

Very tasty! I made this as written except I left out the cayenne which was OK with me as it was spicy enough for me without it. I used chipotle chili powder as well. I used a 15 oz tub of medium spicy level salsa that I got in the locally made Hisp...more
