Moroccan Broiled Salmon

- Moroccan spice Blend ( From Gourmet Magazine ) or buy your own shopping list
- 1 teaspoon ground cumin shopping list
- 1 teaspoon ground ginger shopping list
- 1 teaspoon salt shopping list
- 3/4 teaspoon freshly ground black pepper shopping list
- 1/2 teaspoon ground cinnamon shopping list
- 1/2 teaspoon ground coriander seeds shopping list
- 1/2 teaspoon cayenne shopping list
- 1/2 teaspoon ground allspice shopping list
- 1/4 teaspoon ground cloves shopping list
- 2 large salmon steaks, about 1 inch thick shopping list
- olive oil shopping list
- Ras El Hanout: Moroccan spice blend (see above ) shopping list
- juice from a fresh lemon shopping list
- Garnish: shopping list
- Sliced toasted almonds shopping list
- chopped fresh cilantro shopping list
- lemon slices shopping list
How to make it
- In a broiler pan, place 2 tbs olive oil
- Lay steaks down to fit pan.
- Squeeze on lemon juice and dust heavily with the spice
- Carefully flip over fish in oiled pan and repeat with lemon juice and spices
- Broil until cooked through
- When out of the oven, sprinkle with the almonds and cilantro
- Note: to broil broccoli: have broccoli cooked crisp tender.
- Toss in olive oil, lemon juice and fresh minced garlic and S&P
- Broil a few minutes to brown top of broccoli
- This can be done the last few minutes while fish is finishing broiling.
