  • Directions:
  • 1. Place all of this up in a big bowl.
  • 2. Add the dressing.
  • 3. Salt & FGP
  • 4. Fold gently but thoroughly.
  • 5. Garnish with fresh Cilantro.
  • 6. Enjoy
  • This isn’t one of those neatly stacked, properly arranged jobs. Granny said the flavours need to blend.
  • The dressing:
  • Here’s where eclectic comes in. First time we had this it was Italian dressing. Next time it was French; then Ranch and then Thousand Island. All of these dressings were made on the spot and all delicious but never the same one twice in a row.
  • I’m fond of the Italian and the Ranch but whatever lights your fire. This goes very nicely with some light garlic bread.

    You need more oil, Keni! I know EG always intends his recipes more as a guide so I'll just mention that a red onion or a couple shallots can substitute for his onion!
