Slow Cooker Chicken Mole

- 4 lbs boneless, skinless chicken thighs (I used b/s breasts) shopping list
- coarse salt (I used reg salt) shopping list
- 1 28 oz can whole tomatoes shopping list
- 1 medium yellow onion, roughly chopped shopping list
- 2 dried ancho chiles, stemmed shopping list
- 1 large chipotle chile in adobo sauce shopping list
- 1/2 cup sliced almonds, toasted shopping list
- 1/4 cup raisins shopping list
- 3 oz bittersweet chocolate, finely chopped (1/2 cup) shopping list
- 3 garlic cloves, smashed and peeled shopping list
- 3 tbsp extra virgin olive oil shopping list
- 3/4 teas ground cumin shopping list
- 1/2 teas ground cinnamon shopping list
- fresh cilantro leaves, for serving (I didn't use) shopping list
How to make it
- Season chicken with salt, place in 5 to 6 quart slow cooker. In a blender puree tomatoes, onion, ancho & chipotle chiles, almonds, raisins, chocolate, garlic, oil, cumin & cinnamon until smooth. Add tomato mixture to slow cooker, cover and cook on high until chicken is tender, approximately 4 hours (8 hours on low). Serve chicken with sauce topped with cilantro.
