How to make it

  • Heat the oil in a wok or heavy frying pan
  • Add the onions and garlic and fry for 2 mins
  • Add the ginger and the pork
  • Fry on high heat for 3 mins, turning constantly
  • Add the veg and apple
  • Add the soy, oyster and fish sauce and a few turns of black pepper
  • Still on high heat and turning constantly, fry for a further 3-4 mins
  • Serve over rice or noodles (I add a stock cube to the cooking water for extra taste)
  • You can alter and add to the veg - mushrooms, carrots etc.
  • If using chicken instead or pork - fry a little longer to be sure the chicken is cooked through before adding the veg.
