Ginger Pork Stir Fry

- 2 cloves garlic, crushed or finely chopped shopping list
- 1 large onion, cut into chunks shopping list
- 2 inches ginger root, peeled and finely sliced shopping list
- 1 eating apple, cored and cut into chunks (peeled or unpeeled) shopping list
- 2 cups green beans shopping list
- 2 cups broccoli florets shopping list
- 2 tablespoons Thai fish sauce shopping list
- 1 tablespoon soy sauce shopping list
- 1 tablespoon oyster sauce shopping list
- 3 cups thinly sliced pork loin or fillet shopping list
- 2 tablespoons veg, olive or sesame oil for frying (add a little more if needed during cooking) shopping list
- black pepper shopping list
How to make it
- Heat the oil in a wok or heavy frying pan
- Add the onions and garlic and fry for 2 mins
- Add the ginger and the pork
- Fry on high heat for 3 mins, turning constantly
- Add the veg and apple
- Add the soy, oyster and fish sauce and a few turns of black pepper
- Still on high heat and turning constantly, fry for a further 3-4 mins
- Serve over rice or noodles (I add a stock cube to the cooking water for extra taste)
- You can alter and add to the veg - mushrooms, carrots etc.
- If using chicken instead or pork - fry a little longer to be sure the chicken is cooked through before adding the veg.
