Turmeric Chicken

- 2 cloves garlic or 2 tsp garlic powder shopping list
- 2-3 whole cloves, crushed shopping list
- 1 tablespoon canola oil shopping list
- 3 whole chicken breasts, cut into three pieces shopping list
- 1 medium onion, minced shopping list
- 4 teaspoons turmeric shopping list
- 1 can diced tomatoes shopping list
- 1/2 teaspoon fresh thyme shopping list
- 1/2 cup chicken broth shopping list
- 1 package button mushrooms shopping list
- parsley shopping list
- salt and pepper shopping list
- red pepper flakes shopping list
How to make it
- Crush the garlic with the cloves using a mortar and pestle, or the side of a knife.
- Pour the oil in a skillet and turn the heat to high. Toss in the chicken pieces and brown on all sides, just a couple minutes. Add the minced onions and cook until translucent, about 8-10 minutes.
- Add the turmeric and the garlic mixture and stir until incorporated. Cook for 3 minutes. Pour in the tomatoes and thyme, reduce the heat to low, and simmer for 15 minutes.
- Pour in the chicken broth and cook for another 20 minutes. Add the mushrooms with 10 minutes left.
- Season with salt, pepper and red pepper flakes, sprinkle with chopped parsley, and serve.
