How to make it

  • Combine first 5 ingredients in zip-loc bag, add chicken pieces, shake to coat with marinade. Seal and refrigerate for 30 minutes, turning once.
  • Remove chicken from bag, discard marinade. Thread chicken onto skewers, with spaces between chicken to speed cooking.
  • Place skewers on grill, turning occasionally, until chicken is cooked through.
  • Prepare tzatziki sauce, set aside.
  • Remove cooked chicken chunks from skewers.
  • Serve chicken wrapped in pita dressed with veggies and a dollop of sauce.
  • Enjoy!

Oh yes! I did forget to add that part...I actually just squeeze all the liquid from the shredded cucumbers in my hands before adding to the yogurt. Thanks!

I love Slovakia also! We have a Greek fishing/sponge village about 10 miles away and that is what I always get there. A suggestion with the Tzatziki Sauce, put the grated cucumber in a coffee filter and fine sieve to drain a bit as it tends to make the Tzatziki watery if it is too wet.
