How to make it

  • Prepare orzo per package directions, subbing stock for some or all of the water called for. When done, drain and keep warm.
  • In medium bowl, whisk together orange juice, juice from 1 lemon, Dijon, dill and shallots until well combined.
  • Slowly add oil, whisking constantly, until well mixed.
  • Add salt and pepper and give another quick whisk to combine.
  • Add half of the dressing to the warm orzo and toss well. Set aside slightly warm or at room temp while preparing the fish.
  • Heat a grill pan or other heavy pan over medium high heat.
  • Sprinkle both sides of the fillets with Old Bay and a lil salt and pepper and grill for 2-4 minutes on each side.
  • Serve the fish over the orzo salad, and drizzle with a lil more of the dressing.
