Pan Grilled Fish Over Citrus Dijon Orzo

- 3lbs fish fillets shopping list
- couple T Old Bay Seasoning shopping list
- olive oil shopping list
- 2 cups dry orzo shopping list
- 3 cups chicken or veggie stock shopping list
- 1 large shallot, diced small shopping list
- 1 lemon, juiced shopping list
- 1/2 orange, juiced shopping list
- 1/4 cup Dijon shopping list
- about 3T fresh dill, minced or sub 1-2T dry dill weed shopping list
- kosher or sea salt and fresh ground pepper shopping list
How to make it
- Prepare orzo per package directions, subbing stock for some or all of the water called for. When done, drain and keep warm.
- In medium bowl, whisk together orange juice, juice from 1 lemon, Dijon, dill and shallots until well combined.
- Slowly add oil, whisking constantly, until well mixed.
- Add salt and pepper and give another quick whisk to combine.
- Add half of the dressing to the warm orzo and toss well. Set aside slightly warm or at room temp while preparing the fish.
- Heat a grill pan or other heavy pan over medium high heat.
- Sprinkle both sides of the fillets with Old Bay and a lil salt and pepper and grill for 2-4 minutes on each side.
- Serve the fish over the orzo salad, and drizzle with a lil more of the dressing.
