How to make it

  • Basic Sauce:
  • Melt butter in medium saucepan over medium low heat
  • Add onion, 1/2 tsp salt and oregano
  • Cook stirring occasionally until onions are golden brown, 3-5 minutes
  • Add garlic for about 30 seconds
  • Add crushed tomatoes and sugar.
  • Increase heat to high and bring to a simmer
  • Reduce heat to medium low and simmer until slightly thickened about 10 minutes
  • Off heat, add oil and basil.
  • Add pepper and salt if needed
  • Cook salt pork in butter until crispy, 7-10 minutes
  • Drain pork on paper towel and remove all but about 2T of oil
  • Saute onions and garlic per basic recipe,
  • When fragrent, add red wine and reduce by half
  • follow basic recipe, omit basil, stir in pork and cheese at end along with the olive oil
  • Add pepper flakes to onion mixture
  • Increase garlic to the 4 cloves
  • Substitute parsley for basil
  • Add anchovy filets and pepper flakes to onion mixture
  • Substitute olives and capers for basil
  • Add vodka with the tomatoes
  • Substitute parsley for the basil
  • Substitute heavy cream for the olive oil
