Mascarpone Coffee Cake

- Streusal: shopping list
- 1 stick cold butter cut up shopping list
- 1 cup flour shopping list
- 1 cup dark brown sugar shopping list
- 1/4 tsp salt shopping list
- 2 tsp cinnamon shopping list
- 1 tsp nutmeg shopping list
- optional:1 cup nuts, ex: pecans toasted and chopped shopping list
- cake base: shopping list
- 2 1/2 cups flour shopping list
- 1 stick butter softened shopping list
- 2 large eggs room temperature shopping list
- 1 cup sugar shopping list
- 1 container mascarpone cheese ( 1 lb ) shopping list
- 1 tsp vanilla , lemon or almond flavor shopping list
- 1 tsp baking powder shopping list
- 1 tsp baking soda shopping list
How to make it
- Make streusal.
- Combine dry ingredients
- Cut in butter for coarse crumbs, set aside or chill till use
- Make cake batter
- Beat eggs, sugar, vanilla and cheese till well blended and fluffy
- Combine flour, baking powder and baking soda
- Gradually beat in flour into cheese mixture
- Mixture will be very thick, may have to finish combining by hand with a mixing spoon
- Spread mixture in a greased 10 inch pan or baking pan to fill 1/2 full.
- Use back of a wet spoon to equally spread batter in pan.
- Sprinkle with streusal
- Bake in a 350F oven, middle rack 45-60 minutes or tested done in center with a toothpick
- Remove to rack to cool
- Cut into pieces when warm
- Best served warm or a room temperature

Realized at the last minute I only had 8 oz. of mascarpone, but proceeded anyway! ;) Cake is rich, with a nice crumb and not too sweet. I'd double up on the extract, or maybe use a combination of vanilla and one of the others next time. Topping wa...more
