How to make it

  • Make streusal.
  • Combine dry ingredients
  • Cut in butter for coarse crumbs, set aside or chill till use
  • Make cake batter
  • Beat eggs, sugar, vanilla and cheese till well blended and fluffy
  • Combine flour, baking powder and baking soda
  • Gradually beat in flour into cheese mixture
  • Mixture will be very thick, may have to finish combining by hand with a mixing spoon
  • Spread mixture in a greased 10 inch pan or baking pan to fill 1/2 full.
  • Use back of a wet spoon to equally spread batter in pan.
  • Sprinkle with streusal
  • Bake in a 350F oven, middle rack 45-60 minutes or tested done in center with a toothpick
  • Remove to rack to cool
  • Cut into pieces when warm
  • Best served warm or a room temperature

    Realized at the last minute I only had 8 oz. of mascarpone, but proceeded anyway! ;) Cake is rich, with a nice crumb and not too sweet. I'd double up on the extract, or maybe use a combination of vanilla and one of the others next time. Topping was of course delicious - love the nutmeg in it. I used a 9" round pan, which was probably just a smidge too small for this recipe, and I seemed to have an excess of topping. Still, the kids loved it, and I thought it was yummy. Will make this one again!
