How to make it

  • Preheat oven to 350°F.
  • Oil a 9 x 5 inch loaf pan, line with wax paper and oil top of paper.
  • Beat butter, cream cheese, sugar in large bowl with electric mixer until well blended.
  • Add eggs, one at a time, beating after each addition.
  • Beat in vanilla.
  • Combine almond flour with salt, baking powder, cinnamon, nutmeg and cardamom in a bowl.
  • Gradually add to egg mixture while beating on medium speed.
  • Mixture may seem loose
  • Pour into prepared pan
  • Bake 45 to 55 minutes or until toothpick inserted into center comes out clean.
  • Cool in pan 15 minutes and carefully remove from pan to rack to cool completely
  • Note: for a lighter textured baked good, may separate the eggs, beat yolks into the creamed mixture, beat white soft peaks and fold into the batter
  • Serve with berries and cream if desired.
