How to make it

  • I poached my lobster tails in butter with lemon juice. You could grill them, if you prefer.
  • Prepare the dressing, whisking in a slow drizzle of olive oil last, until slightly emulsified.
  • To plate:
  • Toss baby spinach in the dressing and mound on each plate. Add sliced tomato, sliced avocado and lobster tail on each plate. Sprinkle spinach with the bacon and drizzle extra dressing left in bowl over the tomatoes and avocado.
