How to make it

  • Preheat the oven to 375 degrees. Place the cornflake crumbs in a shallow dish. In a bowl, combine the melted margarine, lemon juice, salt and pepper. Use a fork to beat the mixture together. Dip the chicken into the lemon-margarine mixture and then into the crumbs.
  • Place the coated pieces on a baking sheet that has been sprayed with non-stick spray. Repeat with the remaining chicken. Arrange them so they don't touch each other if possible. Bake at 375° for 45 minutes.

    Very tasty - I drizzled a little extra lemon juice and melted butter over the chicken after it came out of the oven. I should have watched the cook time a little better - 45 minutes was too long. I will try 25-30 next time!

    I made this tonight and it was so very good! Very crunchy & moist oven fried chicken! More in Points Oven Fried Corn Flake Chicken review..I added my pic as well!

    Note: I drizzled a little melted butter on the chicken to insure the crust wouldn't be dry after reading your comment Redsfantracy, it worked well!

    This was good. I'd make it again. They were a little dry on top though. I think I'll drizzle a little of the butter and lemon juice mixture over the tops of them next time.
