How to make it

  • Heat a large skillet on medium heat, brown ground turkey, drain any fat. Add olive oil to pan (2-3 tbsp, or what is needed) . then add chopped onion & bell pepper, cook until soft, add garlic, continue cooking until turkey is done. Add a little salt & pepper to taste.
  • Add the diced tomatoes, tomato sauce & thyme, stir well, cook for about 15 minutes on low. Add rice & sliced olives, continue cooking for 5-10 minutes until heated through. Top with shredded cheese.
