Ground Turkey & Peppers with Rice

- 1 lb ground turkey (you can sub any ground meat) shopping list
- extra virgin olive oil shopping list
- 1 small onion, chopped shopping list
- 1 bell pepper, chopped shopping list
- 2 cloves garlic, minced shopping list
- 1 15 oz diced tomatoes with green chiles shopping list
- 1 8 oz can tomato sauce (I have used 2 cans, add the 2nd if needed) shopping list
- 2 cups cooked rice (more or less, add as much or little as you like!) shopping list
- 2.25 oz can sliced black olives, drained shopping list
- A very small pinch dried thyme shopping list
- 1/2 cup shredded mozzerella (or your favorite cheese) shopping list
- salt & fresh ground pepper to taste shopping list
How to make it
- Heat a large skillet on medium heat, brown ground turkey, drain any fat. Add olive oil to pan (2-3 tbsp, or what is needed) . then add chopped onion & bell pepper, cook until soft, add garlic, continue cooking until turkey is done. Add a little salt & pepper to taste.
- Add the diced tomatoes, tomato sauce & thyme, stir well, cook for about 15 minutes on low. Add rice & sliced olives, continue cooking for 5-10 minutes until heated through. Top with shredded cheese.
