Tomato Basmati Rice

- 1/2 cup sliced scallion whites shopping list
- 1 1/2 tsp. ground cumin shopping list
- 1 1/2 tsp. ground coriander shopping list
- 2 T. olive oil shopping list
- 1 cup dry basmati rice shopping list
- 1 1/2 cups water shopping list
- 1 can (14. oz.) diced tomatoes, drained shopping list
- 1/4 cup chopped scallion greens shopping list
How to make it
- Sweat scallion whites, cumin and coriander in oil in a saucepan over medium-low heat until scallions softens, 5 minutes. Stir in rice to coat with oil and spices.
- Add water, increase heat to high, and bring mixture to a boil. Cover pan, reduce heat to low, and simmer rice until tender and liquid is absorbed, 15-20 minutes. Stir in tomatoes and scallion greens. Season rice with salt and pepper.
- Servre with Spiced Creamy Spinach Casserole
