- 4 chicken breast halves, boned and skinless shopping list
- two generous tablespoons of honey shopping list
- 4 tablespoons of Sherry shopping list
- juice from two lemons shopping list
- 2 eggs shopping list
- 2 tablespoons of heavy cream shopping list
- 1 teaspoon of salt shopping list
- 1/2 teaspoon of pepper shopping list
- 1 1/2 teaspoons of onion juice shopping list
- bread crumbs (panko for me) shopping list
- butter and oil mix shopping list
How to make it
- Brush the chicken breasts with the honey.
- Put in a plastic bag with the sherry and lemon, place in a flat pan and let them marinate for two hours.
- Pat dry, discard marinade.
- Flatten to an even 1/2 inch thickness.
- Beat eggs, add cream, salt, pepper and onion juice
- (I made onion juice by using my rasp or microplane with a wedge of onion)
- Dip chicken in seasoned eggs and milk.
- Roll in bread crumbs.
- Saute in butter/oil until golden brown on both sides.
- Serve with lemon wedges and chopped parsley for garnish.
