How to make it

  • Brush the chicken breasts with the honey.
  • Put in a plastic bag with the sherry and lemon, place in a flat pan and let them marinate for two hours.
  • Pat dry, discard marinade.
  • Flatten to an even 1/2 inch thickness.
  • Beat eggs, add cream, salt, pepper and onion juice
  • (I made onion juice by using my rasp or microplane with a wedge of onion)
  • Dip chicken in seasoned eggs and milk.
  • Roll in bread crumbs.
  • Saute in butter/oil until golden brown on both sides.
  • Serve with lemon wedges and chopped parsley for garnish.
