Endless Summer Sandwich

- 1/2 cup mayonnaise shopping list
- 2 tablespoons pesto, your favorite kind shopping list
- 1 loaf focaccia bread, I use a sun-dried tomato shopping list
- 2 boneless skinless chicken breast, grilled and sliced shopping list
- 4 slices provolone cheese shopping list
- 1 cup roasted red peppers shopping list
- 1 jar artichokes hearts, drained and thinly sliced shopping list
- 1 cup salad greens shopping list
- alfalfa sprouts, optional shopping list
- avocado slices, optional shopping list
How to make it
- Mix mayonnaise and pesto until well blended.
- Spread evenly onto cut sides of bread.
- Cover bottom half of bread with chicken, cheese, red peppers, artichoke, salad greens, and if using, alfalfa sprouts,avocado.
- Cover with top half of bread.
- Secure with toothpicks.
- Cut into 4 wedges to serve.
