Turkey Pozole Soup

- 8 c. low-sodium chicken broth shopping list
- 1 large onion, sliced (I use sweet onions) shopping list
- 1/4 c. minced garlic shopping list
- 1 T. dried oregano shopping list
- 1 T. chili powder shopping list
- 1 t. ground cumin shopping list
- 1/2 t. each ground coriander and red pepper flakes shopping list
- 2 fresh bay leaves shopping list
- ADD: shopping list
- 2 (15 oz.) cans white hominy, drained and rinsed shopping list
- 1 (15 oz.) can white hominy, drained, rinsed, and pureed shopping list
- 1 1/2 pounds cooked turkey, shredded shopping list
- 1 T. fresh lime juice shopping list
- FOR THE TOPPINGS, SERVE: shopping list
- Shredded romaine lettuce, diced tomatoes, diced avocado, sliced red radishes, sliced jalapeno, chopped fresh cilantro, lime wedges, crushed tortilla chips, crumbled queso fresco shopping list
How to make it
- For the soup, simmer broth in a large pot. Add onion, garlic, oregano, chili powder, cumin, coriander, pepper flakes, and bay leaves; simmer 15 minutes more.
- Stir in hominy and turkey; simmer 5 minutes, then stir in lime juice.
- For the toppings, serve each bowl of soup with romaine, tomatoes, avocado, radishes, jalapeno, cilantro, limes, tortilla chips, and queso fresco.
