How to make it

  • beat eggs
  • gradually add 2 c. sugar
  • stir in 1 c. vegetable oil, 1/4 tsp. baking powder and 1 tsp. salt
  • stir in zucchini
  • in a medium bowl whisk together 2 c. flour, 1tsp. cinnamon, 1 tsp. baking soda, 1/4 tsp. baking powder and 1 tsp. salt
  • mix wet ingredients with dry ingredients
  • spray 2 bread pans or grease and flour
  • bake for 1 hour at 350

    Adirondack: I know some people don't even read some of this stuff-I always do. You list 1/4 tsp as an ingredient but you add 1/2 tsp of baking powder. You list 1 tsp of salt but add 2. ?

    I added half a banana, some nutmeg, substituted pecans for the walnuts. Absolutely delicious!!! Perfect crunchy crust and soft center. Thanks for posting this recipe!

    Although it's still in the oven at this point. I was sad to find conflicting ingredients in the list of items and what I found in the recipe. Also two ingredients were listed to be added twice. I'll just wait to see how it turns out.
