Greek Style Pita Pockets Recipe
One of our family favorites! This is a RR recipe too. The kids love it because dinner is in a pocket! This recipe is also easy to double!

Ingredients
  • 1.5 lbs ground chicken
  • salt & pepper
  • 8 pita pockets or bread
  • zest & juice from 1 lemon
  • 3 tbsp red wine vinegar
  • 1/2 cup EVOO
  • 2 tbsp fresh oregano stipped and chopped (or a pinch of dried)
  • 3 cloves of garlic chopped
  • 2 hearts of romaine chopped
  • 1/2 cup pitted Kalamata olives, coarsly chopped
  • 8 oz feta cheese, crumbled
  • 2 tomatoes, seeded and diced
  • 1/2 a cucumber diced
  • 1/2 a red onion, chopped
  • 1/2 cup fresh flat leaf parsley, chopped

Directions
  1. Preheat pan over med heat.
  2. Combine lemon zest & juice with vinegar in a bowl and wisk in oil. Add oregano, garlic and combine well.
  3. Pour a bit - a little less than 1/2- in pan.
  4. Add chicken to pan and as the chicken is cooking:
  5. Combine veggies in a bowl and toss well with remaining dressing until very lightly coated, season w/ salt & pepper.
  6. Add crumbled feta cheese & parsley, toss lightly
  7. Pop the pockets in the microwave for about 5 min a piece.
  8. Finish cooking chicken and fill each pocket with some chicken and salad. Yum!
