How to make it

  • Preheat pan over med heat.
  • Combine lemon zest & juice with vinegar in a bowl and wisk in oil. Add oregano, garlic and combine well.
  • Pour a bit - a little less than 1/2- in pan.
  • Add chicken to pan and as the chicken is cooking:
  • Combine veggies in a bowl and toss well with remaining dressing until very lightly coated, season w/ salt & pepper.
  • Add crumbled feta cheese & parsley, toss lightly
  • Pop the pockets in the microwave for about 5 min a piece.
  • Finish cooking chicken and fill each pocket with some chicken and salad. Yum!
