Greek Style Pita Pockets

- 1.5 lbs ground chicken shopping list
- salt & pepper shopping list
- 8 pita pockets or bread shopping list
- zest & juice from 1 lemon shopping list
- 3 tbsp red wine vinegar shopping list
- 1/2 cup EVOO shopping list
- 2 tbsp fresh oregano stipped and chopped (or a pinch of dried) shopping list
- 3 cloves of garlic chopped shopping list
- 2 hearts of romaine chopped shopping list
- 1/2 cup pitted kalamata olives, coarsly chopped shopping list
- 8 oz feta cheese, crumbled shopping list
- 2 tomatoes, seeded and diced shopping list
- 1/2 a cucumber diced shopping list
- 1/2 a red onion, chopped shopping list
- 1/2 cup fresh flat leaf parsley, chopped shopping list
How to make it
- Preheat pan over med heat.
- Combine lemon zest & juice with vinegar in a bowl and wisk in oil. Add oregano, garlic and combine well.
- Pour a bit - a little less than 1/2- in pan.
- Add chicken to pan and as the chicken is cooking:
- Combine veggies in a bowl and toss well with remaining dressing until very lightly coated, season w/ salt & pepper.
- Add crumbled feta cheese & parsley, toss lightly
- Pop the pockets in the microwave for about 5 min a piece.
- Finish cooking chicken and fill each pocket with some chicken and salad. Yum!
