Down Maine Baked Beans

- 4 cups (2 pounds) small white beans (navy beans or great northern) shopping list
- 1 pound piece salt pork shopping list
- 1 large peeled onion shopping list
- 1/2 cup molasses shopping list
- 1 Tablespoon salt shopping list
- 1 teaspoon pepper shopping list
- 1 heaping teaspoon dry mustard shopping list
How to make it
- Pick over and rinse beans, then soak overnight if time permits. OR
- Early in the morning, place beans in saucepan, cover with cold water, and bring to a boil. Simmer a half hour. Drain.
- Score salt pork in several places and place it and the onion in the bottom of a bean pot. Pour the beans in the pot. Put molasses, mustard and pepper on top. Pour boiling water in to just cover the top of the beans. Put the lid on the bean pot.
- Put in 325 degree oven and bake. Check in an hour and add water to maintain level. At the end of two hours, add the salt and stir, once again adding water as needed.
- Bake all day, checking liquid level periodically. An hour before serving, take the lid off the pot for good and pull the salt pork to the surface to crisp. It and the beans should develop a little crust.
