Recipe by GayeLe: Down Maine Baked Beans/saved
A good baked beans dish. Can taste black pepper in the background.
Used a brine again to overnight soak the beans. Beans were fork tender after only 2 hours of oven time but I left them bake another 4 hours to marry the flavors and let the liquid slowly evaporate. Added a cup of water after the first 2 hours but from then on it was fine.
I be ecstatic over the results I am getting from the brine soak. No more hard beans for me and processed in quicker time too. :)
    Sorry 'bout the blurry pic.

Yum. Those look good. I love baked beans but I already have two recipes bookmarked for them! Its good to hear you have been having good results with the brine soak. I think I'll try that next time.

I love baked beans as well and have never made them...would they still be good if I omitted the salt pork? Your pic looks really good!

One gallon of water and 3 tablespoons table salt; overnight soak. Rinse well.
