Egg Biscuit & Gravy

- half dozen egg yolks shopping list
- half teaspoon salt shopping list
- half cup ricotta OR shopping list
- half cup cottage cheese shopping list
- half dozen egg whites shopping list
- half teaspoon tartar shopping list
- quarter cup bacon grease or butter shopping list
- quarter cup all-purpose flour shopping list
- quart milk shopping list
- season to taste shopping list
How to make it
- Preheat oven to 300F.
- Beat yolks, salt and ricotta until smooth.
- Beat whites and tartar until stiff peaks form.
- Fold half egg whites into yolk mix, then fold the other half in.
- Spoon egg mixture onto a well greased 10x15 baking sheet in about half foot circles.
- Makes 5 biscuits.
- Bake for about forty minutes until golden brown.
- Cool on wire rack completely.
- Place biscuits in an airtight container for overnight.
- In the morning, melt grease or butter in a medium saucepan over med-hi heat.
- Make a roux by stirring in flour and bake for a couple minutes to get rid of the flour taste and the roux starts to color up.
- Add milk slowly, stirring to prevent lumps.
- Season to taste.
- Stir until thick.
- Plate biscuits and add gravy.
