How to make it

  • Preheat oven to 300F.
  • Beat yolks, salt and ricotta until smooth.
  • Beat whites and tartar until stiff peaks form.
  • Fold half egg whites into yolk mix, then fold the other half in.
  • Spoon egg mixture onto a well greased 10x15 baking sheet in about half foot circles.
  • Makes 5 biscuits.
  • Bake for about forty minutes until golden brown.
  • Cool on wire rack completely.
  • Place biscuits in an airtight container for overnight.
  • In the morning, melt grease or butter in a medium saucepan over med-hi heat.
  • Make a roux by stirring in flour and bake for a couple minutes to get rid of the flour taste and the roux starts to color up.
  • Add milk slowly, stirring to prevent lumps.
  • Season to taste.
  • Stir until thick.
  • Plate biscuits and add gravy.
