How to make it

  • Put the potatoes in a pan, cover with cold water.
  • Turn the heat on and let the potatoes boil until they are tender.
  • Drain the water and mash the potatoes.
  • Pre-heat the oven to 400F.
  • Add butter, milk and cream. You might need to add more milk, it depends on how starchy your potatoes are.
  • Season with salt, pepper and freshly grated nutmeg.
  • Pour the mash on a baking dish. Top with the grated cheddar.
  • Bake for about 20 minutes until the top is golden brown.

    I used yellow potatoes, some French variety.
    By vintage cheddar, I mean an aged sharp cheddar. I usually buy a Welch one.
    In Portugal is very common to add a sprinkle of nutmeg to mashed potatoes. For me, mashed potatoes without nutmeg is not the same :) Leave it out if you don't like the taste though.

    ooh looks good! But few questions/comments; nutmeg? hmmm interesting. always have put nutmeg in desserts. And vintage cheddar? would that be an "aged" sharp cheddar for us in the states? which potatoes do you like to use? russet, red, yellow? TYVM for recipe
