How to make it

  • Heat oil in a large pot over medium heat.
  • Add onion, carrot, pepper and zucchini and cook 10 minutes, until they begin to brown.
  • Add garlic and cook 2 minutes longer.
  • Stir in the water, tomatoes, salsa, potatoes, green onion, chives, nutritional yeast and taco seasoning.
  • Bring to a boil, then reduce heat, cover and simmer 30 minutes, until vegetables are tender.
  • Add the turkey, re-cover and cook 10 minutes longer.

    salt-free taco seasoning? Really... they make that? Wow.. Now that is cool. I wish I could use something besides potatoes. We ware trying to do without heavy starches. Any suggestions? Would a turnip root be the same?
