How to make it

  • Mix together the dipping sauce ingredients and set aside.
  • Cream together the cream cheese and pesto sauce and spread a 1/4 onto each tortilla. Spreading a thin layer over the whole surface.
  • Dice the avocado and toss with the lime juice.
  • Sprinkle a 1/2 cup of chicken on one half of the tortilla, followed by a little avocado and cranberries, top with a 1/4 cup of shredded cheese. Fold the tortilla in half and cook over med-low heat in a lightly oiled skillet until golden brown on both sides.
  • Repeat with the next 3 tortillas. and serve with the dipping sauce.
  • The restaurant serves this with yam fries or Caesar salad for a dinner size meal. I like it with a spinach salad.
  • ~This is great as a cold wrap too!
