How to make it

  • Add the flour to the cold potatoes. Season (it needs a bit more seasoning because you've added the flour)
  • Mix into a dough you can roll out. Sometimes, depending on the type of potato, you'll need a bit more flour.
  • Or, if it's too dry and crumbles, add a little milk.
  • Roll out the mix to about 1/2 inch thick and cut into rounds with a cookie cutter.
  • Melt the butter or margarine in a frying pan and fry the rounds 2-3 minutes on each side on a medium heat until golden.
  • Serve hot with the remaining hot butter drizzled over.
  • Also - you can add very finely chopped onion and herbs of your choice to the mixture before cooking.
  • These can be cooked with less butter if you're watching your weight - or if you fancy them for Breakfast with syrup.
