- 2 cups cold mashed potato (seasoned and mashed with a little butter or margarine and a drop of milk or cream) shopping list
- 1/2 cup all purpose flour (sometimes a little more - it isn't precise) shopping list
- butter or Margarine for frying - enough to leave some melted, left over shopping list
- Salt and pepper shopping list
How to make it
- Add the flour to the cold potatoes. Season (it needs a bit more seasoning because you've added the flour)
- Mix into a dough you can roll out. Sometimes, depending on the type of potato, you'll need a bit more flour.
- Or, if it's too dry and crumbles, add a little milk.
- Roll out the mix to about 1/2 inch thick and cut into rounds with a cookie cutter.
- Melt the butter or margarine in a frying pan and fry the rounds 2-3 minutes on each side on a medium heat until golden.
- Serve hot with the remaining hot butter drizzled over.
- Also - you can add very finely chopped onion and herbs of your choice to the mixture before cooking.
- These can be cooked with less butter if you're watching your weight - or if you fancy them for Breakfast with syrup.
