Super Chocolatey Zucchini Bread

- 1 cup whole wheat flour shopping list
- ½ cup all-purpose flour shopping list
- ½ tsp nutmeg shopping list
- Pinch salt shopping list
- ½ tsp baking soda shopping list
- ½ tsp baking powder shopping list
- ¼ cup unsweetened cocoa powder shopping list
- 1 egg shopping list
- 1 tsp vanilla shopping list
- 6 packets Truvia shopping list
- ½ cup brown sugar shopping list
- 3 tbsp Nutella shopping list
- ½ cup smooth ricotta (something like buttermilk-ricotta.html">Buttermilk Ricotta or even pureed cottage cheese) shopping list
- ½ cup butter.html">Roasted Apple butter (made without sugar or sweetener) shopping list
- ¼ cup semisweet chocolate chips shopping list
- 14 oz grated zucchini shopping list
How to make it
- Preheat oven to 350°F and grease a loaf pan.
- In a mixing bowl, beat together the egg, Truvia, sugar, Nutella, ricotta and applesauce.
- Add the flours, nutmeg, baking soda, baking powder & cocoa, stirring just until moistened.
- Fold in chocolate chips and zucchini.
- Pour batter into prepared pan
- Bake 1 hour and 15 minutes.
- Cool in the pan for 10 minutes, then carefully turn out and cool completely on a wire rack
