How to make it

  • Prep:

  • Quarter washed potatoes
  • Cut washed carrots into inch pieces
  • Chop washed celery
  • Quarter peeled onions
  • Cook:

  • In a Dutch oven or large skillet over medium heat, saute garlic in oil for 1 minute.
  • Add butter, melt.
  • Mix 2 T flour, salt, pepper, garlic powder, onion powder in a medium baking dish
  • Dredge roast into mixture on all sides.
  • Add the roast to skillet; brown on all sides.
  • Slow-cook:

  • Put browned roast into crock pot
  • Add all drippings from skillet onto roast
  • Add Worcestershire Sauce on top of roast
  • Add potatoes, carrots, celery, and onion on top roast
  • Add broth or water to crockpot
  • Sprinkle seasonings of No-Salt Seasoning, or onion powder, garlic powder, and dried parsley flakes
  • Temperature:

  • Slow cook on low for 6-8 hours
  • Slow cook on high for 4-6 hours
  • Or until vegetables are soft and meat is tender
  • 30 minutes before ending, mix cornstarch (or flour) and slowly add and stir briskly, milk to make a slurry (use cooked broth instead of milk). NO LUMPS! Blend into broth and cook to thicken. Blend in green beans so as not to break them. The gravy makes for no waste!
  • Plate:

  • Pull out meat and slice or pull apart
  • Dish out vegetables in bowl or plate with meat
  • We use a plate because it's thickened. We eat our pot roast with cottage cheese on the side and a piece of bread or a hot biscuit. I eliminate a lot of salt in the preparation. I always tell people to season to taste with salt and/or pepper.
  • Alternative Cooking:

  • I've used this recipe for oven-roasted pot roast prepared before church. I add to a large roaster pan with a lid and put in the green bean. Put in the oven on 275°F from 7:30 a.m. until 12:30 - 1 p.m. when we've returned from church. Make gravy on stovetop in roaster when you've removed all vegetables and meat. Mix the cornstarch (or flour in a cup and slowly add milk or cooked broth and mix with a fork until all is dissolved. NO LUMPS! Add to drippings in roaster. Season to taste, although, with all the spices, I've found it doesn't take adding much more!

    Pot roast is pot roast. Added salt at the end. Nothing special for flavor but still good.
