Beef Pot Roast Recipe
By me. This is the most tender... most delious pot roast EVER. It is definately a family favorite and my husband begs often for me to cook this.

Ingredients
  • * 1 (3 to 5 pound) Beef Chuck pot roast
  • * Drizzle of olive oil
  • * Salt and Pepper
  • * 4 cups beef stock
  • * ¾ pound potatoes, quartered and peeled
  • * ¾ pound baby carrots

Directions
  1. Preheat the oven to 325° F. Peel and cut the potatoes and place into large pan with baby carrots; add beef stock. To prepare the roast, make slits throughout the roast and beat with a meat hammer. Rub the entire roast with the olive oil. Season with salt and pepper. Heat a large skillet, over medium heat. When the pan is hot, sear the roast on all sides. Remove from skillet and place the roast large pan (along with the vegetables) and cover. Place in the oven and cook for 4 hours. Remove the roast from the oven and arrange on a serving platter. Makes 10 to 12 servings.
  2. [NOTE: If cooking in a crock pot or a slow cooker, cook on HIGH for 5 hours.]
