Wayne's Favorite Potato Soup

- 2 lbs. red potatoes shopping list
- 2 lbs. white potatoes shopping list
- 2 12 1/2 ounce cans of low sodium chicken broth shopping list
- 4 carrots shopping list
- 3 stalks celery shopping list
- 4 tbsp. diced onion shopping list
- 1 bay leaf shopping list
- 1/4 tsp salt shopping list
- 1 tsp Mediterranean sea spice shopping list
- 1/4 tsp. pepper shopping list
- 1/4 tsp. garlic powder (optional) shopping list
- 6 ounces cooked pork roast. shopping list
- 4 oz. (half stick) of butter shopping list
- 1/2 cup flour shopping list
- 2 cups half and half or whole milk shopping list
How to make it
- Peel and dice potatoes. Put in large pan (I used a dutch oven). Pour broth over potatoes.
- Peel carrots and dice or grate. Dice onion and celery. Add all at once to the pan. Add bay leaf, salt, and remaining spices.
- Bring to a full boil. Turn down heat and simmer for about 25 to 30 minutes until vegetables are tender.
- Dice pork into very small pieces and add.
- Remove bay leaf and discard.
- Melt butter. Stir flour into butter until well blended. Add milk and stir until it is smooth and thick. Stir into soup and cook on low to medium heat until itt is thickened and heated through. This should take about 15 minutes.

Sounds delicious! But I think it deserves a fancier name with all those yummy ingredients. Maybe "Wayne's Favorite Kicked-Up Potato Chowder." Will be making this one soon! Love this autumn soup weather!
