Salmon On Spinach, Strawberry And Feta Salad

- 1 1/2 - 2 lbs salmon fillet, divided into even portions shopping list
- Kosher Salt shopping list
- Pepper shopping list
- Old Bay seasoning shopping list
- Olive oil (or canola) shopping list
- 1 bag baby spinach shopping list
- 1 cup strawberries cut into 1/2" pieces shopping list
- 1 cup crumbled feta cheese shopping list
- 1/4 cup sliced almonds shopping list
- Balsamic vinaigrette dressing to taste shopping list
How to make it
- Prepare the salmon portions by sprinkling Old Bay seasoning on the meat side of the salmon
- Turn the fillets over and coat the skin with oil and season generously with salt and pepper
- Heat a non-stick pan to medium high
- When hot, place salmon in skin side down and cook until the skin is crisp, about 4 minutes
- Flip the salmon and lower the heat to medium low and finish them, about 4 minutes depending on thickness and how well you like them cooked. You can also finish them in an oven after flipping them to ensure they're fully cooked to your liking (350 for 6 minutes)
- While the salmon is cooking you can chop the strawberries and add them to the spinach, feta and almonds
- Plate the salad and then drizzle the balsamic dressing across the top. Don't overdo it...you can always add more. Less than 2 T each plate. I used about 1 T per plate and it ended up being plenty
- Place the salmon skin side up on your dish and enjoy!
