Citrus Kale Salad

- Salad ingredients: shopping list
- 10 ounce bag cut up kale, chop it up more shopping list
- ½ head purple cabbage, cut into shreds like for coleslaw shopping list
- 4 carrots, julienned or grated on the large grate size shopping list
- Add: shopping list
- 1 cup fresh cooked beet, diced (I took the easy way, just opened a can of cooked whole beets - make sure you don’t use the pickled variety, but I bet they’d be good here, too!) shopping list
- 1 cup craisins or golden raisins (optional) shopping list
- 1 cup pumpkin seeds or salted cashews shopping list
- ½ cup chopped walnuts or pecans shopping list
- 2 oranges, peeled and cut into bite size pieces shopping list
- 1 cup blue cheese, crumbles (optional, but very good with the fruit flavors in this salad - you could use feta or any milder flavored cheese, if desired) shopping list
- Dressing: shopping list
- ¼ cup maple syrup (honey could be subbed if you don’t have maple syrup on hand) shopping list
- 4 TBLS olive oil (use plain, not flavored oil) shopping list
- 8 TBLS orange juice shopping list
How to make it
- Mix all ingredients together in a large bowl - cover and keep chilled until ready to serve.
- For the dressing, whisk ingredients together, then drizzle over salad ingredients and mix well. Keep refrigerated. Stir again before serving.
