Srircha Potato Salad

- 3 lbs red potatoes shopping list
- 3-4 slices of crispy bacon shopping list
- 2 1/2 tablespoons white vinegar shopping list
- 3/4 cup mayonaise shopping list
- 1/4 cup sour cream shopping list
- 1-2 TBSP sriracha sauce (depends on how hot you like it) shopping list
- 1/4 cup chopped green onion shopping list
- paprika, to taste shopping list
- salt and pepper to taste shopping list
How to make it
- Dice potatoes onto small cubes (you can peel if you want)
- In a large pot, bring potatoes to a boil, then simmer until fork tender, about 8 minutes
- Drain potatoes and move to a large mixing bowl.
- Add salt and vinegar and combine gently with a rubber spatula.
- Allow to cool slightly, letting the potatoes sit for around 15 minutes.
- Combine mayonaise, sour cream, and sriracha in a small bowl.
- Once the potatoes have cooled a bit, fold in using the rubber spatula.
- If you'd like it spicier, feel free to add extra sriracha to the mix.
- Top with crispy bacon, chopped green onion, and paprika and serve at room temperature.
