Mediterranean Style Mexican Fajitas

- 2tbsp Extra Virgin Olive Oil shopping list
- 1lb/450g chicken breast/Thighs or Minute Steak - shredded into strips shopping list
- 1 Onion - finely sliced shopping list
- ½ Green Pepper - cut into strips shopping list
- ½ Red Pepper - cut into strips shopping list
- Large handful of fresh Coriander - torn shopping list
- 12 Flour Tortillas shopping list
- 125g/4oz carton Sour Cream shopping list
- Optional: Guacamole shopping list
- MARINADE shopping list
- 4 cloves Garlic - finely chopped shopping list
- 6tbsp Red Wine; shopping list
- 3tbsp Worcestershire Sauce shopping list
- 1tsp dried Oregano shopping list
- ½tsp ground Cumin shopping list
- ½tsp Sugar shopping list
- 180ml fresh Lime Juice shopping list
- Optional - 75ml/5tbsp Tequila shopping list
How to make it
- Mix all marinade together, add meat, cover and marinade in fridge min 1 to 2 hours or overnight if possible;
- Heat the oil in a large frying pan, add the onions and sauté on med/low heat for 5 minutes or so or until soft but not coloured;
- Add peppers, most of the coriander, meat and as much marinade you wish;
- Sauté until ready, about 5 to 8 minutes;
- Serve in dish garnished with rest of coriander, accompanied by hot tortilla wraps and sour cream

Dec 5/15 This is another great recipe from Don. The meat was tender and full of great flavour. There was only 3 of us eating and there is only a very little left. Will be making again. Thank you Don.

I made these today and they have a delicious flavor. It is different than the fajitas you find in Texas but they were a hit. I used beef fajita meat and it was very similar in flavor to the way gyro meat tastes here. Can't go wrong with that!
