Thai red chicken curry

- 2 Tsp olive oil shopping list
- 400g chicken fillets, sliced shopping list
- 1 tbsp prepared Thai red curry paste shopping list
- 2 cups mixed vegetables cut into strips (courgette, carrot, red capsicum) shopping list
- 1 Tbsp cornflour shopping list
- 375ml can evaporated milk light and creamy shopping list
- 2 Tbsp chopped corriander shopping list
How to make it
- heat oil in a pan, add chicken, and stir until cooked...stir in the curry paste, until combined
- Add the vegetables and conbined cornflour and evaporated milk, bring to the boil stirring constantly, boiling 1 min
- stir in corriander and serve imediately on Basmatti or Jasmine rice...
- enjoy!
