Thai Red Chicken Curry Recipe
This curry is great, not only is it so quick and easy...its light and refreshing too...great served with basmatti or Jasmine rice

Ingredients
  • 2 Tsp olive oil
  • 400g chicken fillets, sliced
  • 1 tbsp prepared thai red curry paste
  • 2 cups mixed vegetables cut into strips (courgette, carrot, red capsicum)
  • 1 Tbsp cornflour
  • 375ml can evaporated milk light and creamy
  • 2 Tbsp chopped corriander

Directions
  1. heat oil in a pan, add chicken, and stir until cooked...stir in the curry paste, until combined
  2. Add the vegetables and conbined cornflour and evaporated milk, bring to the boil stirring constantly, boiling 1 min
  3. stir in corriander and serve imediately on Basmatti or Jasmine rice...
  4. enjoy!
