Thai Red Chicken Curry Recipe

Ingredients

2 Tsp olive oil

400g chicken fillets, sliced

1 tbsp prepared thai red curry paste

2 cups mixed vegetables cut into strips (courgette, carrot, red capsicum)

1 Tbsp cornflour

375ml can evaporated milk light and creamy

2 Tbsp chopped corriander

Directions

heat oil in a pan, add chicken, and stir until cooked...stir in the curry paste, until combined

Add the vegetables and conbined cornflour and evaporated milk, bring to the boil stirring constantly, boiling 1 min

stir in corriander and serve imediately on Basmatti or Jasmine rice...
