How to make it

  • Heat olive oil in a large skillet or wok. Add mushrooms and saute for 5 min. Add peppers and onions and continue to cook until vegetables start to soften. Approx. 8 - 10 min. Remove from skillet.
  • Using the same skillet, add chicken and more olive oil if desired. Cook until chicken is almost done, seasoning with the salt (optional). Add teriyaki sauce, 1/2c. pineapple juice, garlic powder, and black pepper. Stir until mixed together. Add peppers/onions/mushrooms. Continue cooking until sauce starts to boil.
  • In a small cup, mix corn starch and cold water. Stir until starch is dissolved. Pour over chicken and stir. Cook a few more minutes until sauce thickens.
  • Add pineapple to chicken, cooking until pineapple is just heated through. Serve over rice.
