Mushrooms In A Red Wine Sauce

- 3tbsp Extra Virgin Olive Oil shopping list
- 350g/12oz Mushrooms - carefully cleaned shopping list
- 2tbsp Red Pepper - chopped shopping list
- 1tbsp Green Pepper - chopped shopping list
- Liberal splashes Red Wine shopping list
- ½oz butter shopping list
- Salt and freshly ground black pepper shopping list
How to make it
- Warm the oil in a wok/sauté pan over a medium to high heat, add the mushrooms and peppers, season to taste and sauté for some 4 to 5 minutes or so until softened a bit and mushrooms start to release their juices;
- Add the red wine and butter, bring to boil, then reduce heat and simmer until the sauce has thickened to consistency and taste required.
