How to make it

  • Warm the oil in a wok/sauté pan over a medium to high heat, add the mushrooms and peppers, season to taste and sauté for some 4 to 5 minutes or so until softened a bit and mushrooms start to release their juices;
  • Add the red wine and butter, bring to boil, then reduce heat and simmer until the sauce has thickened to consistency and taste required.

    I have my own little story..."Hearst" Ontario is a little lumber town in the "far North" (actually on the 49th parallel) populated by Quebeckers that wanted to go un-draughted in WWII...but anyways, there is a restaurant/hotel called the "Companion" that can knock your socks off for cooking.

    Reconstructing it, I'd suggest cremini mushrooms, de-stemmed, and slivered, in EVOO, at low temp, with a dash of soya, a pinch or two of ground garlic, and maybe a pinch of onion powder, sautéed very lightly.
    DS#1 is a bit of an epicure on these things, and he about swoons when I offer these up.

    Don you just reminded me of a mushroom dish that I haven't made in years. I am going to have to make them once it cools down. I will see if I can find the recipe. and add it. Thanks for that.
