How to make it

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place chicken and potatoes into a large bowl. Pour olive oil over them, and stir to coat. Scatter the chicken and potato pieces in a cookie sheet with sides. Sprinkle with rosemary, Italian seasoning, garlic powder, salt and pepper.
  • Bake for 1 hour in the preheated oven, uncovered. During the last 15 minutes, baste, then top with grated cheese.

    I'm not sure what is chopped Italian seasoning!
    Seasoning is like S&P.
    Could the author mean chopped Italian herbs?

    I have both Italian seasoning and herbs. Unfortunately both are labeled seasoning. :(

    Delicious! I loved the combination of spices and seasonings. I've never cooked chicken on a baking sheet before. I covered my baking sheet with foil for easy clean up. I thought an hour at 375 may be too much (I usually cook chicken at 350 for one hour) but it wasn't. I like how crispy the potatoes got. A bit more in IMI.
