    Crispy Rosemary Chicken And Fries
    It is cold and cloudy and very windy here today. The delicious smell of this and the heat from the oven was perfect for this day. However, I got sidetracked by Sunday chores and before I knew it, the timer buzzed! So, no cheese!! And I even had some in the house, dang it. I like the leftovers I will have for the next couple of work day dinners.

    I've made a similar recipe using butter instead of olive oil (and no Italian seasoning or potatoes), but the olive oil sounds like a healthier choice. The chicken thighs appeal to me because I like dark meat. It's a lot juicier and more flavorful than white. And cold, leftover chicken is so good - yum!

    Points, you could always bake the chicken with the skin on for flavor, then remove it when serving.

    Frankie, the chicken looks so good on its own that I don't think the cheese would be missed.

    Good point, Bakerme. I plan on using the leftovers on green salad for dinner this coming week so the skin is coming off here as well.
    I saw your comment on the recipe, pso. I used Italian herb seasoning. I am pretty certain that is what she meant. She may have left out "herb" in her posting.

    Good flavor all around. Left the skins on potatoes and thighs. Was worried about the potatoes getting done. Both were perfectly baked.
    Well seasoned. Didn't forget the cheese. Also sprinkled on some nutritional yeast to get more cheese flavor.
    Plated with some turmeric rice.
