Pork Loin Roast With Baby Bella's

                    - pound boneless pork loin roast shopping list
- 8-10 sm baby bella's, quartered or roughly chopped shopping list
- 3 cloves garlic shopping list
- 1/4 t thyme shopping list
- 1/2 cup dry white wine shopping list
- 1/2 cup chicken broth shopping list
- 1/2 t parsley shopping list
- salt and pepper to taste shopping list
- 1/2 cup water shopping list
- 1 t corn starch shopping list
- 1 t olive oil, for searing shopping list
How to make it 
                    - Preheat oven to 375.
- Remove all visible fat from roast.
- Thinly slice 2 of the garlic cloves.
- Make slits in the roast and put in the garlic.
- Clean the mushrooms, quarter or roughly chop and place in the bottom of a 8x10 casserole dish.
- Add thyme, parsley, salt and pepper and micro plane in the last clove of garlic.
- In a hot frying pan sear the pork. Transfer to casserole dish.
- Combine wine and chicken stock.
- Deglaze the pan with the wine and broth and pour over the mushrooms
- Place in oven and cook until temp is 145
- When roast is done, remove from oven and tent to keep warm.
- Place drippings in a sauce pan and reduce by half.
- Add corn starch to water and stir will.
- Stir corn starch mixture into drippings and bring to a boil to thicken.
