Rice With Mimi Bella's

- 2 T butter (I used marg) shopping list
- 1 T EVOO shopping list
- 1 1/4 cup chicken broth shopping list
- 1 cup long grain rice shopping list
- ¼ t thyme shopping list
- ¼ t oregano shopping list
- ½ t parsley shopping list
- 6 mini bella’s ( about 200 gr) roughly chopped shopping list
- 3 green onions cut into ½ inch pieces shopping list
- ½ med. onion, cut in half and sliced thinly shopping list
- salt and pepper to taste shopping list
- 1 clove garlic shopping list
- few shakes of worcestershire sauce shopping list
How to make it
- Melt butter in pot and add EVOO.
- Add mushrooms, onions, thyme, oregano and worcestershire. Cook on med-high heat, stirring constantly for 10 mins. or until the mushrooms are dark brown. Micro plane in the garlic and remove from heat.
- Add chicken broth and bring to a boil, scraping up all the brown bits from the bottom.
- Add rice and bring to a boil. Cover and adjust heat to low for 15 minutes.
- Remove from heat and let steam, with cover on, for 10 minutes.
- Stir in green onions and serve.
