How to make it

  • Melt butter in pot and add EVOO.
  • Add mushrooms, onions, thyme, oregano and worcestershire. Cook on med-high heat, stirring constantly for 10 mins. or until the mushrooms are dark brown. Micro plane in the garlic and remove from heat.
  • Add chicken broth and bring to a boil, scraping up all the brown bits from the bottom.
  • Add rice and bring to a boil. Cover and adjust heat to low for 15 minutes.
  • Remove from heat and let steam, with cover on, for 10 minutes.
  • Stir in green onions and serve.

    This rice was very flavorful and very good! I liked it a lot and agree with author in that it would pair well with many proteins- including fish. Smelled so good as herbs, onion and mushrooms cooked! Thanks for this keeper of a recipe!!
    Won't let me rate it for some reason- but I give it 5 stars!
