Caprese Grilled Cheese

- 4 slices sourdough bread shopping list
- 1-2 Roma tomatoes, thinly sliced shopping list
- 1 small onion, thinly sliced ( I like yellow or red onions) shopping list
- 2 -3 basil leaves, chiffonade into long thin strips (alternatively, can use a pesto) shopping list
- Gruyere, Swiss, or Mozzerella cheese shopping list
- Balsalmic vinegar for drizzling shopping list
How to make it
- 1. Butter outsides of sourdough slices.
- 2. Place layer of cheese, tomatoes, onion, basil or pesto, drizzle of balsalmic, and then another layer of cheese, between the slices of bread.
- 3. Place in a pan over medium heat and cook until browned to your liking and carefully flip - cook for another minute or two, until done. Enjoy!

Nice sandwich, and luckily tomatoes and basil are still in season here, but pesto is a good idea when you don't have the fresh basil on hand. Added a review in the IMI :) ------------> more
