How to make it

  • 1. Peel the potatoes, cut them into pieces and put in a pan. Cover with cold salted water. Bring to a boil and simmer until tender. Drain, put back in pot over the heat, shaking the pan until potatoes are dry.
  • 2. Work through a sieve, potato ricer or mash. Add the butter, egg and salt and pepper. Beat the mixture until fluffy. I use my emersion blender.
  • 3. Put mixture in a pastry bag (zip lock with hole cut at corner) . Pipe small amounts on a buttered cookie sheet. Brush with the egg yolks.
  • 4. Bake at 350 until they are golden (about 10 Minutes)

    Another great recipe from Gaspesiangal. The potatoes where smooth and great flavour. Only thing to remember is what ever your using to pipe do not over fill LOL I did and it was a very tasty mess for sure. will be making again. Thank you for sharing this wonderful recipe.
