Caulifower Soup In Crockpot

Cauliflower, cheese, soup and easy, put everything in pot, set time and walk away
Ingredients
- 1 large head cauliflower shopping list
- 1 onion chopped shopping list
- 2 tbsp butter shopping list
- 3 celery stalks chopped into large pieces shopping list
- 2 carrots chopped into large pieces (I used a can of carrots drained ) shopping list
- 1/8 tsp nutmeg shopping list
- 1/8 tsp cayenne pepper shopping list
- 4-5 cups chicken broth shopping list
- 1 potatoe chopped shopping list
- 1 tsp thyme shopping list
- 2 tsp paprika shopping list
- salt & pepper shopping list
- 1/2 cup half and half shopping list
- 1/2 cup shredded cheddar cheese shopping list
How to make it
- Cut cauliflower into florets, add to crockpot
- Chop onion, celery, carrots and potatoe and add to pot
- Add all the seasoning and chicken broth and cook as follows:
- 6-8 hours (low) or 4-6 hours (high)
- Puree until smooth (I used a hand blender, right in pot, if you do not have one, add to a blender a little at a time and puree till smooth and return to pot
- Add half n half and cheese, stir and cook till cheese melts.
- Add more half n half if you want it creamier.
